Our Favourite Filipino BBQ Recipe: The Perfect Summer Cookout Dish!

As the days get longer and the temperatures rise, it's the perfect time to fire up the grill and enjoy some outdoor cooking. In honour of Filipino Heritage month this June, and with Father’s Day just around the corner - we've decided to share with you a classic Filipino dish! We can't count how many times we've made this delicious BBQ for our family gatherings - it's an easy crowd pleaser, that's sure to satisfy the Titas and Titos!

So why not treat Dad to a mouthwatering meal that embodies the spirit of summer? Our favourite Filipino BBQ recipe is the perfect choice, boasting a tangy, sweet, and savoury sauce that will have everyone coming back for seconds!

 

Ingredients

For the BBQ Marinade:

  • 4 lbs thinly sliced Pork (Substitute with Chicken or Beef)
  • 1 cup Soy Sauce
  • 1 cup Banana Ketchup
  • 1/2 cup Calamansi Juice (Substitute with Lemon juice)
  • 1 cup Lemon or Lime Soda (ie. 7Up or Sprite)
  • 1/4 cup Brown Sugar
  • 5 cloves minced Garlic
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt
  • Bamboo Skewers (soaked in water for at least 30 minutes to prevent burning)

For the Dipping Sauce:

  • 1/2 cup Filipino Vinegar (ie. Sukang Maasim)
  • 2-3 sliced Thai Chilies

For Serving:

  • Cooked Jasmine Rice
  • Our Lemon Ginger, Sumer Sipper!


Instructions

  1. Prepare the Marinade: In a large bowl, combine soy sauce, banana ketchup, brown sugar, calamansi juice, soda, minced garlic, black pepper, and salt. Mix well until the sugar is dissolved and the marinade is well blended.

  2. Marinate the Meat: Add the thinly sliced pork (or your choice of protein) to the marinade, ensuring each piece is well-coated. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavours to meld and penetrate the meat.

  3. Prepare the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly spread and glowing red. Be safe!

  4. Skewer the Meat: Thread the marinated meat onto the soaked bamboo skewers, leaving a bit of space between each piece to ensure even cooking.

  5. Grill the Skewers: Place the skewers on the preheated grill. Cook for about 2-3 minutes on each side, basting with the leftover marinade occasionally, until the meat is caramelized and cooked through. Be careful not to overcook to keep the meat tender and juicy!

  6. Prepare the Dipping Sauce: In a small bowl, combine the Filipino vinegar with the sliced Thai chilies. This spicy vinegar is the perfect accompaniment to this sweet and savoury BBQ.

  7. Serve: Serve the grilled BBQ skewers on a bed of fragrant jasmine rice. Offer the spicy vinegar dipping sauce on the side for an extra kick.
